Backstory: A Dream Years in the Making

The connection between **Pizzeria Lola** and **Indeed Brewing** isn’t a new one. It dates back to **2019**, when Chef **Ann Kim** envisioned a pizza trailer serving the thirsty crowds at the brewery. Fast forward to **spring 2020**, just when everything seemed poised to cook up, the world was forced into a pandemic pause, halting those dreams. “My team was so excited about the prospect,” reminisces Kim, “they never really stopped being sad about it.”

Resurrection of the Idea

Recently, fate intervened. Chef Chris White of **Pizzeria Lola** spotted the **Little Tomato’s** wood-fired pizza trailer for sale, reigniting that long-pending project. “It felt serendipitous when we reached out to Indeed for collaboration,” shares Kim. “It’s as if the universe conspired to bring us back together.” Indeed’s interest was palpable, as they were also seeking a food option to replace **Revival**. It was clear: this partnership was meant to be!

Menu Highlights: What to Expect

The food truck features a **unique setup** with a dome-shaped oven mounted on a trailer, allowing chefs to craft artisanal pizzas right in front of hungry patrons. Although the cooking space is compact, Chef White assures that the menu will be **specifically curated**. You’ll have a tasty selection of **five 10-inch pizzas**, including:

  • Cheese
  • Margherita
  • Korean BBQ
  • Tavern Pie
  • My Sharoni

Additionally, the menu will feature **rotating specials**, ensuring there’s always a reason to come back for more. And while soft serve won’t be available just yet, you can still indulge in **Lola’s beloved brown butter chocolate chip cookies**. Heaven in every bite!

Crafting Community: An Exciting Partnership

**Indeed Brewing’s** Chief Business Officer, **Ryan Bandy**, couldn’t be more thrilled about this partnership, expressing his admiration for **Pizzeria Lola**. “I’ve always been a huge fan. The vibe, the food—it’s all incredible,” he says. While there are no immediate collaborations between the brewery and the food truck, Bandy believes there’s ample opportunity for exciting synergy in the future. After all, who wouldn’t want a perfect pairing of craft beer and freshly baked pizza?
