  • Bureaucratic Obstacles: From health permits to securing commercial-grade equipment, the hurdles seemed endless. Stricter than expected, city rules demanded setup at a physical location with a full prep kitchen.

  • The Hidden Grease Trap: Perhaps the most shocking setback was discovering the necessity of a buried grease trap, a requirement no one had mentioned until the end of the process.

A Year-Long Journey

Jakila expressed the frustration of the drawn-out timeline:

“It was a very tedious process, taking us over a year to get everything done officially. We almost gave up!”

But through it all, the couple’s commitment to their community and culinary passion kept them moving forward.
