Chicago’s Filipino Food Scene: A Culinary Revolution Led by Francis Almeda
The Heartbeat of Ravenswood’s Culinary Treasure
Have you tasted the rich flavors of Filipino cuisine in Chicago recently? If so, there’s a good chance that Francis Almeda was instrumental in your gastronomic experience. Known as the driving force behind Ravenswood’s Side Practice Coffee, Almeda is transforming the way Chicagoans appreciate Filipino flavors. Located at 5139 N. Damen Ave, this café specializes in innovative beverages featuring ube, the famous purple yam from the Philippines.
In the vibrant West Loop, at Drip Collective, Almeda’s partnership brings to life the signature turon latte, echoing the beloved Filipino dessert. Additionally, his latest venture, Novel Pizza Cafe, located at 1759 W. 19th St. in Pilsen, is pushing boundaries with its longanisa-topped pizza—a delightful twist on the classic Filipino sausage. Recently launched Kanin next door to Side Practice focuses on musubi, a delightful Filipino-Hawaiian rice snack—because in Tagalog, "kanin" means rice!
Satisfying Sweet Tooths and Hungry Tummies at Del Sur
The culinary journey doesn’t stop there. Just steps away at Del Sur, the bakery at 4639 N. Damen Ave, people are lining up for longanisa-stuffed croissants and ube cream-filled cookie sandwiches. New owner Justin Lerias, previously at Side Practice, launched this venture with Almeda’s guidance—resulting in queues that can stretch for hours.
Francis: More Than Just a Coffee Guy
At 42, Almeda embodies the spirit of a creative entrepreneur. “In 2020, when I opened Side Practice, my desire was to showcase Filipino flavors,” he recalls, “I believe in infusing authenticity into what you create.” His Filipino heritage is at the core of everything he does—a commitment to represent his culture through culinary innovations.
From Advertising to Culinary Ambassador
Before diving into the culinary world, Almeda was a creative director at leading advertising agencies and even brought his insights to Google. Yet, after two decades in that realm, he found himself yearning for something more meaningful. “I was working hard on things I didn’t care about,” Almeda reflected.
In 2016, he ventured into a merchandise business, launching adorable enamel pins under Reppin—to great success. However, it was a project at Allegiant Stadium, home to the Las Vegas Raiders, that ignited his passion for hospitality.
Navigating Challenges to Create Opportunities
Almeda opened Side Practice under the extraordinary circumstances of a pandemic. Despite initial challenges, the café launched with impressive fervor, selling 326 drinks on its opening weekend. The commitment to supporting Filipino entrepreneurs made Side Practice a hub for pop-ups, showcasing local talent.
Celebratory Collaborations
Almeda’s vision would soon take shape, as various entrepreneurs sought the opportunity to showcase their culinary feats through pop-ups. Notable names like Lily Wang and Joe Briglio of Nine Bar, and Jojo Ybe of Milky Milky graced the café with their offerings.
His network of support extends further: “It’s all about representation; everyone deserves to shine,” Almeda asserts. From Lerias’ successful pastries at Del Sur to collaborations with Ty Banks at Drip Collective, Almeda has turned his community into a collaborative kitchen.
Kanin: A New Culinary Hub
In a thrilling new chapter, Almeda partnered with Julius Tacadena to create Kanin, which serves an array of Filipino-Hawaiian rice snacks that debuted to enthusiastic crowds. This venture continues his commitment to community-focused cuisine, inviting all to partake in "everybody eats."
A Food Scene Elevated
Beyond food, Almeda encapsulates the spirit of community. As fellow restaurateur Lawrence Letrero of Bayan Ko puts it, “Whatever Francis touches promotes Filipino culture on a grand scale.” Almeda believes in the potential of rising generations, supporting them in their culinary dreams.
Almeda’s influence fosters a thriving environment where collaboration leads to unprecedented innovation in the Filipino food scene in Chicago—a true testament to the community spirit he has instilled.
Final Thoughts
Through passion, resilience, and an unwavering commitment to his culture, Almeda is weaving a vibrant tapestry of Filipino flavors throughout Chicago. As this dynamic food scene flourishes, it’s clear that with each collaboration and culinary creation, Almeda is not just making waves—he’s crafting a culinary legacy.
