The Love Story of Chef Carlos and Bend
Chef Carlos Anthony, who has spent 17 years working alongside Chef Malarkey, had initially intended to stay in Bend only for the restaurant’s launch. However, the community and the beauty of the area captured his heart.

“I fell in love with it. I recently married, and as soon as my wife decided she also loved it, we moved up here as soon as we could,” Chef Carlos shares. His passion for the community and connection to the land shines through as he speaks about the incredible local resources available to them.
Fresh Ingredients from Local Ranches
At Hawkeye and Huckleberry, the concept of "ranch to table" is taken very seriously. With their own ranch located in Tumalo, Chef Carlos emphasizes the joy of sourcing fresh ingredients directly from Central Oregon.
“Having our ranch is like nothing I’ve ever experienced. And it’s not just from our ranch; we collaborate with wonderful farmers like Rainshadow Organics. I love how much Central Oregon has to offer!” says Chef Carlos. This commitment to quality is evident in every dish served.

Building a Strong Team
But what’s a great restaurant without a dedicated and enthusiastic team? Chef Carlos believes that the success of Hawkeye and Huckleberry relies on 50% food and 50% people. The synergy among the staff creates an unforgettable dining experience, where the energy is contagious.
“People will come to a restaurant for a celebrity chef, but they will come back for the service,” he remarks. And as Neil insists, “The staff here is incredible. Great energy. They bring a good time here.”
