In a poignant moment at a local farmers market, Kong Doctora found herself in a heartfelt conversation with a loyal customer. The woman shared the loss of her mother, highlighting their unexpected connection—a reminder of how food can forge bonds among strangers. It’s these connections that drove Kong Doctora to find ways to foster community through culinary experiences.

“There’s a lot of culture in the food you create,” she reflects. “Food often leads to questions rather than assumptions, inviting others to share their stories.”

From Corporate Life to Culinary Dreams

In 2023, Kong Doctora took a leap of faith, leaving her 21-year career at State Farm to embark on an exciting culinary journey. With a treasured bao recipe inspired by her mother, she began producing steam buns in a shared kitchen, marking the inception of Bao Destination.

Nurturing a Vision: The Hope for a Food Hall

The seeds of her vision were planted years prior when she attempted to develop a food hall in Uptown Normal—a place designed to celebrate local culinary creativity in a vibrant and upscale setting. However, the onset of the pandemic thwarted her plans, leading her to rethink her approach.

While many were perfecting sourdough recipes at home, Kong Doctora dedicated her time to refining her beloved bao recipe. With her family as enthusiastic taste testers, she launched her venture from a ghost kitchen at the Parke Regency Hotel, quickly becoming known for her delicious pork dumplings and innovative flavors like Mongolian chicken and vegan options.

The Entrepreneurial Spirit: Persistence and Networking

Breaking into the local grocery market involved a blend of persistence and courage. Kong Doctora didn’t wait for opportunities; she actively sought them out, approaching grocery store managers to advocate for her product.

“They will say no, or they will say yes,” she notes accurately—a testament to her resilience.

As a new entrepreneur, Kong Doctora had to embrace a steep learning curve. From networking to watching tutorials on YouTube, she immersed herself in the intricacies of food business management. To gain further insights into restaurant operations, she became a partner in Kobe Revolving Sushi Bar, which opened in November 2024.

Sharing Knowledge: Community Over Competition

For Kong Doctora, the culinary journey extends beyond food; it’s about empowerment and mentorship. She founded cooking classes named Beyond Social to share her expertise and encourage others.

Realtor Jennifer Johnson, a supporter of Kong Doctora’s initiatives, recognized her dedication to uplifting women and minority entrepreneurs. Johnson nominated her for the McLean County Chamber of Commerce 2024 Athena Leadership Award, a reflection of her commitment to advocacy within the community.

“She’s all about creating and helping others in the community,” Johnson asserts. “She serves as an example, mentor, and ambassador.”

Empowering Future Generations of Entrepreneurs

In 2023, Kong Doctora partnered with CO+LAB to establish the Young Entrepreneur Market, an inspiring event for children aged 5 to 17 to explore entrepreneurship.

Despite the challenges of running her business alone, Kong Doctora takes inspiration from her setbacks. She acknowledges that while she considered shutting down Bao Destination due to profit challenges, she remains determined to pursue her vision.

“If I keep going, something is going to lead me where I want to go,” she insists firmly.

Embracing Cultural Heritage Through Food

Kong Doctora’s journey is deeply rooted in her cultural heritage. Having moved to the U.S. from Hong Kong about 19 years ago with her family, she has remained connected to her roots. Alongside her late sister Eleanor, they were instrumental in founding the Asian Pacific American Coalition at Illinois State University, creating a legacy that continues to flourish.

Kong Doctora’s mission is driven by a desire to support others in their entrepreneurial journeys, sharing her knowledge so that they do not have to navigate challenges alone.

“I can learn everything about running a business and then help someone do that. I should pay it forward,” she emphasizes.

For her, success is not solely about financial gain; it is rooted in the impact she has on others.

“If I can inspire or motivate others to take risks and follow their dreams, then that would be success to me,” she shares.

A Taste from the Kitchen: Vivian’s Signature Shrimp Dumpling Recipe

Ingredients

  • 1/2 lb. peeled and deveined shrimp
  • 2 finely chopped green onions
  • 2 tbsp finely chopped ginger
  • 2 tsp soy sauce
  • 1 tsp dark soy sauce
  • 1 tsp oyster sauce
  • 1/2 tsp white pepper
  • 1 tbsp oil
  • 1 package of 30 dumpling wrappers (defrosted)
  • 1/4 cup water

Directions

  1. Bring 4 quarts of water to boil.
  2. In a bowl, combine shrimp with soy sauces, white pepper, and mix well.
  3. Add green onion, ginger, oil, and water. Stir to combine.
  4. Place about a tablespoon of filling in the center of each wrapper. Moisten edges with water and seal tightly.
