Cookies By Freddie: A Sweet Addition to Acadian-Perkins Plaza
A new delight is hitting the streets of the Capital Region! Cookies By Freddie, a charming cookie food truck, is set to make its debut on June 28, right in the heart of Acadian-Perkins Plaza. Fans of baked goods, rejoice! This sweet haven will take the place of Crawfish on the Geaux as it closes for the season.
The Journey of Frederique Bekale: From Passion to Profession
The dynamic mind behind this delightful venture is Frederique Bekale, affectionately known as Freddie. Though the concept has been in the works for around four years, Freddie’s baking journey traces back much further. Initially, she enjoyed whipping up treats for her friends and family. However, everything changed when she welcomed her first child in 2018.
"Baking became my refuge," Freddie shares. "The routine of measuring ingredients and experimenting with flavors restored a sense of purpose and joy in me when I needed it the most."
With encouragement from her close friends, Freddie took a bold leap of faith to transform her passion into a profession. A brick-and-mortar location was out of reach, so she decided on a food truck—perfect for a one-woman operation that could comfortably fit into her busy life as a claims adjuster and mother to a six-year-old.
A Culinary Dream Takes Shape
The vision for Cookies By Freddie started to materialize in August 2024. Freddie spent six months finding the ideal vehicle and collaborating with design experts to create a custom look. With a striking wrap designed by Quattro Signs & Graphics, featuring mouth-watering images of her cookies, the truck is as appealing as the treats it serves.
“He’s just the best in the game,” Freddie reflects on her designer, Marlon Cespedes, who encapsulated her vision perfectly.

Get ready to treat your taste buds! Cookies By Freddie will offer a rotating selection of eight flavors: four classic staples and four decadent deluxe options:

- Brownie-Stuffed Chocolate Chip

Each recipe reflects a journey of experimentation. For instance, the lemon white chocolate cookie was serendipitously created during flavor trials, while the iconic chocolate chip cookie underwent meticulous testing to achieve perfection.
"It took eight months—after the 20th batch of my chocolate chip cookie, I stopped counting!" Freddie laughs. "I experimented with different chocolate and sugar combinations until I was satisfied."
Operating Hours and Grand Opening Details
Cookies By Freddie will feature a menu of four flavors every weekend, which will be announced on social media by each Thursday. Mark your calendars for the grand opening on Saturday, June 28, from noon to 6 p.m. The food truck will operate on Saturdays and Sundays, with one off weekend each month.
