Transforming the Food System: Innovators at the Forefront of Culinary Change

In a world where food choices impact our health, environment, and economy, innovative students are emerging as dynamic players in reshaping the food system. Armed with passion and creativity, they are developing groundbreaking startups aimed at reducing food waste, enhancing nutrition, and promoting sustainability. Let’s explore some of these exciting ventures.

Nourishing Innovation: Selina Li and Gymii.ai

Selina Li, a competitive golfer from Hong Kong, has always had a keen interest in nutrition. Inspired to fuse her two passions, she developed Gymii.ai, a revolutionary nutrition tracking app.

Revolutionizing Nutrition Tracking

Li recognized that existing tools like MyFitnessPal were often cumbersome and tailored mostly for weight loss. She aimed for a solution focused on convenience and awareness. “I wanted to know what I was putting into my body without the hassle,” she explains. Using cutting-edge AI technology, Gymii.ai allows users to track their meals effortlessly by simply snapping a photo or recording a video.

Social Connection and Learning

Beyond tracking, Gymii.ai incorporates social features that foster community engagement. Users can share their meals with friends and even compete for consistency on a leaderboard. “My own nutrition journey felt isolating,” Li shared. “When you have accountability, it’s easier to stay on track.”

Tackling Food Waste: Kaylee Yin’s FRUJI Foods

Kaylee Yin, a student majoring in applied economics, aims to tackle food waste through her innovative startup, FRUJI Foods. Drawing inspiration from her family’s background in agriculture, Yin’s mission is deeply personal.

From Waste to Wonder

Growing up as the daughter of one of the largest persimmon growers in the U.S., she saw firsthand the significant waste resulting from the fruit’s cosmetic imperfections. FRUJI Foods addresses this issue by upcycling these charmingly imperfect fruits into dried snacks sold to grocers and food service providers.

Expanding Awareness of Exotic Fruits

“Drying fruit makes it shelf-stable and gives it a longer life,” Yin states. With plans to incorporate additional exotic fruits, she hopes to shift consumer perceptions and highlight the nutritional benefits of lesser-known options.

Flavor Meets Health: Camilo Ortiz and JOUS

Camilo Ortiz, a hospitality administration major, is changing the beverage landscape with his startup, JOUS. This brand focuses on delivering low-calorie, vitamin-rich drinks infused with authentic South American flavors.

Bridging the Flavor Gap

“I realized there was a gap in the market for healthier options,” Ortiz explains. JOUS aims to be a pioneer as the first U.S. fair-trade juice brand. With flavors inspired by childhood memories from Colombia—like passionfruit and pineapple with mint—JOUS forgoes added sugars in favor of natural sweeteners such as monk fruit.

Community Focus

With support from Cornell’s eLab, JOUS is set to launch in convenience stores and bodegas across New York City, targeting a new generation that values pop culture and health.

Innovative Solutions to Food Waste: Michelle Lin’s Hydrogel Project

Lastly, Michelle Lin, an MBA student, is exploring unique methods to combat food waste. Her inventive idea involves using black soldier fly larvae to convert food scraps into a sustainable product.

From Waste to Water Retention

Lin’s project utilizes these larvae to create a hydrogel that helps retain moisture in agricultural applications. “This aligns with my values and passion for sustainability,” Lin shares.
